An abundance of spinach

With the Easter holidays almost upon us, my two vegetable box suppliers delivered on the same day. There’s usually quite a variation between the contents of each, but on this occassion I find myself with double amounts of spinach.  It instantly suggests a smoothie overdrive.

Instead of going for the usual mango combination, I kept to the tropical theme but switched to pineapple. You can pick these up at bargain prices in UK supermakets at the moment. Although they are pretty green when bought, if left in a warm spot for a week they do sweeten up, turning a riper shade of yellow in the process.

Sort of recipe:

Half a sweet pineapple (skinned and diced)

1 banana (peeled)

A big handful – or two – of spinach (well washed)

Juice of 1 lime

Water – to desired consistency (start with 1/2 cup)


Whizz in blender until smooth.

Pour, put your feet up and imagine yourself in a hammock besides blue sea.
