In celebration of Apples: 2 of 3

This uses an uncooked applesauce in a conventionally baked product. You could try this with a dehydrator instead, of course – at a guess it would take about 16 hours. I’m usually too impatient with this mixture to wait that long!

Peanut Butter Cookies (not raw)Apple cookies

2 ripe bananas

1/3 cup chunky peanut butter

2/3 cup unsweetened, raw applesauce

1 1/2 cups oats

1/4 cup coconut

1/2 tsp cinnamon, a dash of ground cloves, and nutmeg

1 tsp vanilla extract

Pinch of salt

Method:

Combine everything in a mixing bowl, stirring to blend.

Put cookie-sized dollops on a lined baking tray and flatten slightly (round off the rustic shapes, if you care about appearances)

Bake for 20-30 mins at  180C/350F

 

Of course, the above is a bit of a detour into the cooking world, but we return to raw with this lovely, uncooked gingered apple crumble (In Celebration of Apples: 3/3)
