Cool as…

Sneaked in an early morning swim in a new location today. The water was so calm and warm (18 deg.), I just had to try it.

By mid-morning it was obvious the day was going to be a hot one so I was keen to slake my thirst with a long, fresh, green drink. This is what I came up with:

Mid-summer cooler
1/2 cucumber
1 stalk celery
1 fennel top (feathery fronds, plus the long stalks)
Knob of ginger
1/4 lemon
1/2 pear
A few fresh mint leaves (chiffonade them) to garnish
A couple of ice cubes (optional)

Juice everything. Dropin the ice-cubes, if using, and sprinkle the mint leaves on top. These will give you a fabulously clean aroma every sip.
Feet up, enjoy.
