Gutsy Winter Salad

Winter has an earthy vibe. Think of all the seasonal root vegetables. Here’s how to put a colourful combination together. If you’re into a detox or internal cleansing phase at this time, beetroot is exactly what’s required. Otherwise, it’s fantastic for the strengthening the blood – and don’t waste the leaves, which if anything are nutritionally superior to the roots.

Beetroot salad Ingredients:
1 Beetroot bulb, grated
2 beetroot leaves, thinly sliced to mix in, or garnish
1/4 red cabbage, shredded
1/2 Red onions, finely sliced
Additional root veg. such as carrot, parsnip, celeriac (optional)
1 t sesame seeds

For Dressing:
2 T Olive oil
1 t Balsamic vinegar
1 Garlic clove
1 t Honey
Salt & pepper to taste


  • Soak the sliced red onions in lightly sugared water for 10 mins or so, to tone down their sharpness. Then drain
  • Add them to shredded red cabbage, grated beetroot & leaves, plus any additional grated root vegetables
  • Make the dressing by putting ingredients into a blender and whiz together, or shaking in a lidded glass jar to mix
  • Pour dressing over salad and massage with fingers or simply toss well to make sure dressing gets absorbed by veg
  • Leave for to develop flavours and 15-30 mins to soften up
  • Sprinkle with sesame seeds and serve

  • TIP
    Why not add a handful of walnuts/pecans/hazelnuts along with the sesame seeds to boost the protein content?
